Rescued Spreads: fruits saved from waste
Perfectly ripe fruit that deserved better than the bin. Now in your jar.
Artisanal Montreal spreads, handmade with unsold fruit recovered from grocery stores and fruit shops. Less sugar than traditional jam, ingredients you can all spell, and a returnable jar that comes back to life.
Every week, tons of perfectly ripe fruit are thrown out in grocery stores and fruit shops because they no longer meet the market's visual criteria. La Transformerie, a non-profit organization in Rosemont, rescues them before they go to compost.
These rescued fruits become, in the hands of volunteers and following the recipes of chef Guillaume Cantin (winner of the 1st season of Les Chefs! on Radio-Canada), artisanal spreads with a short and transparent ingredient list, reduced sugar content, and 100% vegan. Twice as much fruit, half the sugar of conventional jam: the fruit's flavor is highlighted, without artifice.
Distinct flavors, all surprising in their own way.

The three flavors
Strawberry + Basil Festive and sunny. Intense notes of fresh, sweet basil bring out the strawberry flavors in a surprising and unforgettable way. Try it with fresh goat cheese, on scones, or with white chocolate mousse.
Berries + Cinnamon Comforting and deep. The gentle warmth of cinnamon accentuates the intensity of raspberries and blueberries for a combination reminiscent of an autumn forest walk. Delicious with roasted beets, foie gras, shortbread, or French toast.
Pineapple + Vanilla Exotic and refined. Tropical pineapple enhanced by the sweetness of Tahitian vanilla for a gourmet escape with every bite. Perfect on banana bread, plain yogurt, or as an accompaniment to a cheese board.
Usage
Spread on bread, toast, or crêpes. Serve with cheeses, cold cuts, or on a gourmet platter. Incorporate into vinaigrettes, marinades, or sauces (mixed with mustard in a 2:1 ratio, it enhances poultry in no time). Use in baking to fill tarts, cookies, or muffins. Store at room temperature. Almost unlimited shelf life. Refrigerate after opening and consume within one month.

Frequently Asked Questions — Les Rescapés Spreads
| Question | Answer |
|---|---|
| What is Les Rescapés and where do the fruits come from? | Les Rescapés is a project by La Transformerie, a non-profit organization in Rosemont. Every week, the team rescues perfectly ripe but unsold fruits from local grocery stores and fruit shops, saving them from waste. These fruits are then artisanally transformed into spreads, marmalades, and sauces. |
| Are these spreads less sweet than jam? | Yes. Les Rescapés contain twice as much fruit and half the sugar of conventional jam. The fruit's flavor is highlighted, without excessive sugar to mask the taste. |
| What does "consigné" (returnable) jar mean? | The 250 ml jar, as well as its label, are returnable. This means that once the contents are finished, you can return the jar to participating points of sale to be collected, cleaned, and reused. A concrete and simple zero-waste initiative. |
| Are these spreads vegan? | Yes. All Les Rescapés spreads are 100% vegan, without animal products or gelatin. |
| How can these spreads be used other than as a spread? | They are very versatile in cooking. Mixed with mustard in a 2:1 ratio, a spread instantly enhances poultry. It can also be used as a glaze for roasted meats, a base for a vinaigrette, a filling for cakes, or as an accompaniment on a cheese board. |
| How to store these spreads? | Les Rescapés spreads can be stored at room temperature as long as the jar is sealed, with an almost unlimited shelf life. Once opened, they can be stored in the refrigerator for about one month. |
