The freshness of ripe tomatoes, the sweetness of rescued apples. A BBQ with a purpose.

A Montreal artisanal barbecue sauce made with tomatoes and apples rescued from grocery stores, enhanced with garlic, spices, and natural smoke flavour.

Versatile, flavourful, and zero waste.

Before ending up in your jar, these tomatoes and apples were condemned. Not because they had lost their flavour, but because they had lost their perfect appearance in the eyes of the market. La Transformerie rescued them before they became compost and gave them a second life: flavourful, smoky, slightly sweet, and full of character.

This artisanal BBQ sauce is handmade in Rosemont-La Petite-Patrie, following the recipes of Chef Guillaume Cantin. Its base of rescued tomatoes and apples gives it a natural fruity freshness that industrial sauces cannot replicate. Garlic, spices, dry mustard, and natural smoke flavour complete the picture for a versatile sauce that elevates ribs as much as tofu, shrimp, or chicken fillets.

Less sweet than conventional BBQ sauces, with a short and transparent ingredient list, entirely vegan, and free of additives. And in a returnable jar that, once empty, goes back for a new life.

Frequently Asked Questions — Les Rescapés BBQ Sauce

Question Answer
What differentiates this BBQ sauce from commercial sauces? Its base of rescued tomatoes and apples gives it a natural and fruity freshness that an industrial sauce cannot replicate. It is also less sweet, free of additives and colours, with a short ingredient list that you can all spell. And as a bonus, every jar purchased helps reduce food waste.
Is this sauce vegan? Yes. Like all Les Rescapés products, this BBQ sauce is 100% vegan and contains no animal products.
Can it be used as a marinade? Absolutely. It works very well as a marinade for chicken, pork, or tofu. Generously brush the food a few hours before cooking so that the sauce penetrates well. It can also be brushed on at the end of cooking to caramelize and create a beautiful glaze.
What does "returnable jar" mean? The 250 ml jar is returnable, as is its label. Once your sauce is finished, return the jar to participating points of sale so it can be collected, cleaned, and reused. A concrete step to reduce packaging waste.
Who is La Transformerie? La Transformerie is a Montreal non-profit organization founded in 2019 that recovers unsold food from grocery stores and fruit shops to artisanally transform it into spreads, marmalades, and sauces. Since its creation, the organization has recovered over 200,000 kg of food and redistributes a large portion of the collected food to local food relief organizations.
How should the sauce be stored after opening? Refrigerate after opening and consume within one month. Before opening, the sauce can be stored at room temperature with a virtually unlimited shelf life.

Les Rescapés BBQ Sauce: an artisanal barbecue sauce that fights food waste

There are BBQ sauces that mostly taste like sugar. Then there are those that actually manage to taste like something. Les Rescapés BBQ sauce definitely falls into the second category. From the first bite, you discover a smoky, slightly sweet, fresh sauce full of character, made from tomatoes and apples rescued before they unnecessarily ended up in compost. Convincing proof that an imperfect fruit can still become something frankly delicious.

Handcrafted in Montreal by La Transformerie, this artisanal barbecue sauce gives a second life to perfectly good foods that had simply lost their "perfect" appearance in the eyes of the market. The tomatoes and apples used in the recipe come from local grocery stores and are carefully processed rather than wasted. A smart, creative, and deeply consistent approach to more responsible consumption.

What we particularly like about this artisanal BBQ sauce is its balance. The tomato and apple base brings a natural fruity freshness that immediately sets it apart from commercial BBQ sauces, which are often very heavy and ultra-sweet. Here, the flavors remain lighter, more authentic, and much more pleasant on the palate. Garlic, spices, dry mustard, and natural smoke flavor then complete the package with just enough depth to create a rich and versatile sauce.

The result is a BBQ sauce that is less sweet than many conventional versions, but much more interesting in terms of flavor. A sauce that goes equally well with ribs, grilled tofu, roasted vegetables, sautéed shrimp, or a simple chicken fillet. It also works wonderfully as a marinade or as a glaze at the end of cooking to create a beautiful caramelization on grilled dishes. And honestly, even roasted sweet potatoes suddenly become much more exciting with this sauce on the side.

Its short and transparent ingredient list is also one of its great strengths. No complicated additives, no artificial colorings, and no unpronounceable ingredients. Only simple foods, carefully processed according to the recipes of chef Guillaume Cantin. An approach that reminds us that a good sauce doesn't need fifty mysterious ingredients to have taste.

At Eco Loco, we particularly like products that combine pleasure, creativity, and concrete positive impact. This Les Rescapés BBQ sauce embodies exactly that philosophy. Each jar directly contributes to reducing food waste while supporting a Montreal organization deeply committed to valorizing unsold food.

Since 2019, La Transformerie has been recovering food destined for waste to artisanally transform it into gourmet products. A significant portion of the collected food is also redistributed to local food aid organizations. A great example that it is possible to create tasty products while having a real positive impact on the community and the environment.

The returnable jar also adds a particularly interesting zero-waste dimension. Once the sauce is finished, the container can be returned to be cleaned and reused. Because ultimately, even packaging sometimes deserves a second life too.

This artisanal BBQ sauce can be stored at room temperature before opening, then in the refrigerator afterward. And even if the 250 ml jar seems generous at first, it is likely to disappear quite quickly from the first summer barbecues. Especially when someone discovers that it also works very well as an impromptu dip for fries.
