Wild-harvested, carefully aged. A Québec regional mustard like no other.

Wild mustard is one of the worst weeds there is: it invades untreated grain fields and forces organic farmers to dispose of it every season. Gourmet Sauvage had the idea of sourcing it directly from these farmers, who were happy to find a taker for a plant they would otherwise have to bury or burn. A wonderful story of reclamation that gave birth to an absolutely unique local product.

It took years of trials to find the right formula. The secret was discovered by letting a batch age for several weeks: wild mustard absolutely must be aged before consumption for its aromas to be fully revealed. The result: a whole-grain mustard, smooth, slightly spicy, with a natural sweetness provided by maple syrup and white wine.

Frequently Asked Questions: Wild Mustard with Wine

Question Answer
What is wild mustard and where does it come from? Wild mustard is a plant that grows naturally and invades untreated organic grain crops. Gourmet Sauvage sources it directly from organic Québec farmers who would otherwise have to bury or burn it. It's an approach that combines responsible harvesting with the valorization of a plant considered undesirable.
Why does this mustard need to be aged? This is Gourmet Sauvage's great discovery: wild mustard absolutely must be aged before consumption for its aromas to be fully revealed. It's this maturation process that gives it its complex, smooth, and slightly spicy taste that can't be found anywhere else.
Is this mustard sweet or strong? It is slightly spicy and smooth, with a natural sweetness provided by Québec maple syrup and white wine. It's not a strong mustard in the traditional sense, but it has a well-asserted character and a unique aromatic depth.
What's the best way to use this mustard in cooking? Its whole-grain texture is ideal for naturally thickening sauces for meats and marinades. It's also excellent in vinaigrettes, in sandwiches (especially with smoked meat), on a thin pizza, or as an accompanying condiment with charcuterie.
Is this mustard vegan and gluten-free? Yes. It is vegan, gluten-free, and non-GMO. It contains mustard which may contain sulfites, to be noted for sensitive individuals.
How is this mustard different from a classic old-fashioned mustard? Unlike an old-fashioned mustard made from cultivated mustard seeds, this version uses wild-harvested seeds and is aged according to a process developed over the years. Its taste and texture are unique to Quebec, and even to the world.

A Québec mustard that almost never saw the light of day. Thankfully, it exists.

Gourmet Sauvage's Wild Wine Mustard is an artisanal Quebec whole grain mustard, handmade in Mont-Blanc in the Laurentians. Made from wild mustard seeds gathered from organic Quebec producers, aged before potting to reveal its aromas, and flavored with white wine, cider vinegar, and maple syrup. Creamy and slightly spicy, it is ideal in sauces for meats, marinades, dressings, and sandwiches. Vegan, gluten-free, non-GMO, a product of Quebec. Distributed by Eco Loco.

Wild Wine Mustard: An artisanal mustard from Quebec's terroir

Some culinary discoveries happen completely by chance. Gourmet Sauvage's wild wine mustard is a perfect example. Wild mustard is generally considered a particularly invasive weed in organic grain crops. Producers often have to bury or burn it to protect their harvests. Then someone had the brilliant idea to ask, "What if we made something delicious out of it?" The result: an absolutely unique artisanal mustard from Quebec's terroir, born from a recovery process that is as ingenious as it is flavorful.

Made from wild mustard seeds gathered from organic Quebec producers, this mustard has a completely different personality from traditional mustards usually found on shelves. Here, whole grains offer a generous and creamy texture, while white wine, cider vinegar, and maple syrup bring a surprisingly refined aromatic depth.

What we particularly like about this wild wine mustard is its balance. It is slightly spicy without being aggressive, with a subtle natural sweetness that perfectly complements the more herbaceous and complex flavors of wild mustard. Quebec maple syrup adds a round and warm touch, while white wine brings a slight elegant acidity that makes it extremely versatile in the kitchen.

But what makes this mustard truly fascinating is its aging process. After years of testing, Gourmet Sauvage discovered that the aromas of wild mustard fully develop only after several weeks of maturation. This aging completely transforms the taste and allows the product's full aromatic complexity to be revealed. An almost accidental discovery that now gives rise to a mustard with no real equivalent elsewhere.

Its whole grain texture also makes it a particularly interesting ally for cooking. It naturally thickens sauces, dressings, and marinades while adding a lot of character to recipes. It wonderfully accompanies grilled meats, artisanal sausages, smoked meat sandwiches, or even a thin pizza topped with tomatoes and fresh herbs. A small spoonful is often enough to completely transform a dish.

Handmade in small quantities in the Laurentians, this artisanal mustard perfectly reflects Gourmet Sauvage's approach: valuing the riches of Quebec's territory while promoting responsible and creative foraging. The fact of recovering a plant considered undesirable to make such an original gourmet product also adds a beautiful sustainable dimension to the whole story.

At Eco Loco, we like to select products that surprise as much by their taste as by their approach. This wild wine mustard perfectly embodies this philosophy. A product deeply rooted in Quebec's terroir, carefully crafted and capable of transforming everyday recipes into much more flavorful experiences.

The fact that it is vegan, gluten-free, and non-GMO also adds to its appeal for many modern cuisines that are more conscious of the ingredients used. A seemingly simple mustard, but full of nuances and know-how.

Adopting local artisanal products also means discovering unique flavors that tell a story deeply linked to Quebec's territory. And at Eco Loco, we believe that the best everyday products should always be simple, flavorful, and made with intelligence and creativity. Choosing Eco Loco means choosing a simple and sustainable daily life.
