Wild wine mustard
Wild-harvested, carefully aged. A Québec regional mustard like no other.
Wild mustard is one of the worst weeds there is: it invades untreated grain fields and forces organic farmers to dispose of it every season. Gourmet Sauvage had the idea of sourcing it directly from these farmers, who were happy to find a taker for a plant they would otherwise have to bury or burn. A wonderful story of reclamation that gave birth to an absolutely unique local product.
It took years of trials to find the right formula. The secret was discovered by letting a batch age for several weeks: wild mustard absolutely must be aged before consumption for its aromas to be fully revealed. The result: a whole-grain mustard, smooth, slightly spicy, with a natural sweetness provided by maple syrup and white wine.

How to use
