The summer classic is the benchmark honey: never pasteurized, cold-extracted, and liquefied at low temperatures to preserve all its aromas and natural properties. Its color ranges from pale yellow to golden, depending on the year and season. Its taste is delicate and fresh, with beautiful floral and menthol notes.
This polyfloral honey comes mainly from white clover, crucifers, and raspberry, with hints of linden and white sweet clover. Like all unpasteurized honeys, it will crystallize naturally over time: this is the sign of an authentic, living, and untreated honey. This crystallization is normal, natural, and entirely desirable.
Honey does not expire. Stored away from heat and light, it keeps indefinitely. However, it is recommended to consume it within two years of harvest to fully enjoy its aromas.
Each harvest is unique. The color, taste, and aromatic notes vary slightly from year to year, depending on the flowers present around the apiaries and the weather conditions. This is the richness of a natural artisanal honey.

Usage
Use in cooking, on toast, in hot drinks, or by the spoonful. If your honey crystallizes, place the jar in a low-boiling water bath and stir gently until it regains its syrupy consistency. Store away from heat and light, in a dry place.

Why is this honey not pasteurized? Pasteurization destroys some of the enzymes, aromas, and natural properties of honey. By choosing to never pasteurize its honeys, Miels d'Anicet preserves the full natural character and taste qualities of each harvest. It is a conscious choice for artisanal quality.
My honey has crystallized. Is this normal? Yes, absolutely. Crystallization is the natural behavior of all unpasteurized honeys. It does not mean that your honey is expired or of poor quality, quite the opposite. To return it to a liquid state, place the jar in a low-boiling water bath and stir gently. Avoid the microwave, which degrades the properties of honey.
Can the taste or color change from year to year? Yes, and this is intentional. Miels d'Anicet honeys are polyfloral, meaning they come from the nectars of various flowers whose abundance varies depending on the seasons, temperatures, and humidity. Each harvest is unique in its aromatic complexity. This is the signature of an authentic natural honey.
Does honey expire? No. Thanks to its unique chemical composition, honey keeps indefinitely under good conditions (dry, away from heat, below 25 degrees Celsius). However, it is still recommended to consume it within two years of harvest to best enjoy its aromas.
Is this honey organically certified? Miels d'Anicet's Classic Summer honey will no longer be organically certified as of the summer 2024 harvest. It remains a high-quality artisanal honey, harvested at the farm and never pasteurized.
