💚 Why we love it
- Raw honey, unfiltered and jarred without heating or filtering
- Traces of pollen, propolis, and beeswax preserved
- Harvested end of June in the Hautes-Laurentides, Quebec
- Taste: dandelion, beeswax, sweet and warm notes
- Unique harvest: notes of clover, cherry, and fruity touches
- Uniform natural crystallization: a sign of authenticity and quality
Harvested at the end of June in the Hautes-Laurentides, it is jarred without any heating or filtering. Traces of pollen, propolis, and beeswax are thus found: all markers of a living, complete honey, just as the bees produced it. The color is golden yellow, the taste evokes dandelion and beeswax, with sweet and warm notes, and a beautiful length on the palate.
The harvest is unique: the honey comes from a late harvest due to spring weather conditions, which gives it a more fruity side than usual, with notes of clover and cherry. The typical taste of dandelion honey blends with the floral and fruity side of summer honey for an exceptional result.
This raw honey will crystallize uniformly a few weeks after harvest. This is how it should be consumed, crystallized, to protect it from any alteration. It can be gently liquefied in a double boiler if necessary, never exceeding 25 degrees to preserve its properties.
A honey that can be used for all purposes: on toast, in cooking, in a hot drink or simply by the spoonful, for pure pleasure.
Usage
Use on toast, in cooking or by the spoon. Consume crystallized. To liquefy, place the desired amount in a gentle double boiler and stir gently. Never exceed 25 degrees to preserve the properties of raw honey. Store in a cool place where the temperature does not exceed 20 degrees.

Frequently asked questions about this raw honey
| Question | Answer |
|---|---|
| What is the difference between raw honey and classic honey? | Classic honey is generally filtered and slightly heated to obtain a liquid and uniform texture. Raw honey, on the other hand, is jarred without heating or filtering, which naturally preserves pollen, propolis, and beeswax. It offers a richer, more complex flavor and an often crystallized texture. |
| Can raw honey be liquefied? | Yes. Simply warm it gently in a double boiler, stirring occasionally until it reaches a more liquid consistency. It is important not to exceed approximately 25 °C to preserve its nutritional properties and natural structure. |
| Why is the 2025 harvest unique? | The spring 2025 weather conditions led to a later flowering and harvest, which influenced the aromatic profile. The honey presents more fruity notes, with touches of clover and cherry that are added to the typical dandelion taste. Each harvest thus reflects its year. |
| How to store raw honey? | It is best stored in a cool place (below 20 °C), away from light and heat. Under good conditions, raw honey can be stored for a very long time, even indefinitely. |
| Is this honey certified organic? | No. Spring Raw honey from Miels d'Anicet has not been certified organic since the summer 2024 harvest. However, it remains a high-quality artisanal honey, raw, unfiltered, and harvested at the farm. |
