Harvested at the end of June in the Hautes-Laurentides, it is jarred without any heating or filtering. Traces of pollen, propolis, and beeswax are thus found: all markers of a living, complete honey, just as the bees produced it. The color is golden yellow, the taste evokes dandelion and beeswax, with sweet and warm notes, and a beautiful length on the palate.

The harvest is unique: the honey comes from a late harvest due to spring weather conditions, which gives it a more fruity side than usual, with notes of clover and cherry. The typical taste of dandelion honey blends with the floral and fruity side of summer honey for an exceptional result.

This raw honey will crystallize uniformly a few weeks after harvest. This is how it should be consumed, crystallized, to protect it from any alteration. It can be gently liquefied in a double boiler if necessary, never exceeding 25 degrees to preserve its properties.
